Yesterday we went to our favorite store, Whole Foods, to get some fruit for a daycare goodbye party. Today was the "party" and with all of the regulations at the daycare fresh fruit seems to be the best option. While there and walking by the body section it completely hit me that I forgot about teacher's gifts. How could I forget such a thing growing up in a family of teachers?
The body scrub that caught our eye reminded me of a body scrub I had made a while back and so I decided that I could do better than the asking $14.99 a pound. Salt is under $2 a pound so with a couple essential oils I decided to make my own. I tried to recreate the scent we all liked the best, but it didn't quite turn out the way I had hoped. While I was doing that I also started working on some candles.
These aren't just any candles. These were candles that I was going to make for Mother's Day. We bought all of the ingredients in April and a box of ingredients has been sitting on the floor of our kitchen since about then. I had literally everything ready to go and just never got around to doing it. I told Munchkie's Daddy that it was because I was supposed to wait until now for teacher's gifts. So with some sand from the beach just down the street, wax, ocean mist scent and Goodwill glasses, I made some candles.
I have to say that I was so proud of the finished product. I hope they enjoyed it as much as I enjoyed making it.
I took them in this morning and just walking into the room I started crying. The daycare has done so much for us in the last 8 months. They taught Munchkie how to play with other kids and share. How to "use her words," and to "focus." She learned to wait her turn and be patient. She learned colors, and potty trained. She made friends and looked forward to every day there. They helped me be able to sleep and work without worry. I also was able to spend a few days completely by myself, which is something a working mother is never able to do. While most people look down on daycare, I am eternally grateful for all this daycare has been to us. The first of our goodbyes was an emotional one.
Body Scrub
2 cups salt
1/4 cup safflower oil
several drops essential oil(s) of your choice
-Mix together until thoroughly mixed, but still powdery. Rub over body and wash off.

I Actually Won Something!
I am so excited! I went to check my email before I hopped in the shower for work and there in my inbox was the subject "you won the snack bags from Homemade Mothering!" Yay! I had almost forgot that I had entered Homemade Mothering's Contest. I have seen many reviews on reusable snack bags, but couldn't convince Munchkie's Daddy that they were worth the price. I think that FREE Itzy Ritzy bags might help. I am getting two free bags, and I get to choose my three favorite patterns.

My daughter’s favorite thing to say now is “take it us” and she will hold whatever it is up to her cheek. This would be perfect for me to say, if it can fit in the bag, it can come with us. Whether it’s her sunglasses, a random Melissa and Doug pretend food, small book, crayon or anything else she decides to love at that moment.I think it will also be used frequently in Munchkie's lunches to daycare. We tend to use a lot of ziploc bags to daycare because the foods I send are mostly finger foods. These will be great to replace ziploc bags.

Happy Easter
On this Easter morning the pastor (Munchkie's Grandpa)shared this with us. You can't help but smile and realize how amazing it is that so many people from so many backgrounds can get together on an early Easter morning to share in celebration of the resurrection of Christ.
Munchkie's Grandpa says that after last year there were over 100 cities worldwide who were going to be participating this year. I can't wait to see videos!

A Sheltering Tree
Friends are so great. Sunday one of my good friends and I went to a Cherry Blossom Festival in the Little Italy part of town. It was cold and there was only one tree with actual blossoms on it, but it was nice to walk around, look at the venders, chat, drink some horrible church lady coffee, watch older couples dancing to the band backing up a Frank Sinatra imitator and enjoy the fresh air.
Sometimes you need to just take a break for a little bit to enjoy the simple things in life. I am so thankful for all of the wonderful friends I have in my life.

The Stress of Uncertainty
I don't deal well with uncertainty. I don't like when I don't know what's going to happen, whether it be plans for a weekend or the next five years of my life. I have been trying very hard to calm myself down and not allow myself to get caught up in the stress of not knowing, but it is very difficult. Our lives are in such an unstable place right now that it is wracking havoc on my ability to be in control. Throughout the entire application process for PHD programs I have chanted "God has a plan, God has a plan" to remind myself that sometimes I am not always the one in control. However, when the decisions started pouring in, and they weren't the decisions that I had planned on, it wasn't easy.
After several days of hardly getting a word out without crying, I am finally at a point where I can go about my daily business without Munchkie coming up and putting a hand on me saying "Mommy ok? No crying Mama." She is so sweet! While our future is still completely up in the air and we have quite a few difficult decisions to make in the upcoming months, I have to remind myself that "God has a plan" and so I need to move on and pray that we can make the best decisions based on what his plan is. We didn't plan on Munchkie, but what an AMAZING blessing she has been in our lives. I can only hope and pray that we continue to be bestowed with more blessings as amazing as she (without there being more kids involved, haha).

Happy Birthday Munchkie!
My feet and back are killing me from standing in the kitchen for the last 5-6 hours working on Munchkie's birthday cake. Munchkie's Daddy had the living room covered with play kitchen parts, instructions, screws, boxes and tools. I think we are finally almost ready to go to bed after an exhausting evening of prep work.
My little oops is two. I just can't believe it. I can't believe how fast the last two years has gone and how much our lives have changed. Since I have been reminiscing in my head, I thought I would share a little of Munchkie birth day with you. I have been trying really hard not to cry for the last several days. I think I have been doing a pretty good job of holding it together. Posting these pictures is definitely going to make me loose it though.

Lenten Sacrifice
With each year that passes the season of Lent becomes more meaningful to me. Throughout the year I find that I am making sacrifices for a variety of reasons. Some are selfish, some out of necessity and some because I'm a wife and mother. Each year there is a period of time in our lives that demand us to spend some serious time focusing on sacrifice and bettering yourself in a way that is different than the time of resolution making for the New Year. I realize each year how important it is to have this designated period of time to focus on how I can become a better and stronger individual, wife, mother, family member and friend.
I recently read this article from KitchenStewardship.com and it made me start thinking even more about the importance of the preparation for Lent. I did a quick google search which of course took me to the most reliable source, Wikipedia. So naturally that's where I decided to get my basic Lent information from. The time of Lent is in remembrance of the 40 days the Jesus spent in the desert alone. For this time he fasted for the forty days and was tempted by Satan three times. While he was tempted he was able to prevail against the devil by using scripture as his arguments.
So this means to me that I need to focus for these forty days on several things. I need to figure out what is something I depend on that would be a difficult sacrifice for me to make. I need to examine my life and find what consumes my idle time, keeping me from becoming a better person and christian. Then I need to focus strengthening my relationship with this man who made so many sacrifices for me (and I don't mean my husband or father).
After much examination I have determined my plan of attack for this season of Lent.

- Munchkies Daddy and I have decided to give up TV. We know that we spend a lot of time wasted in front of the television and want to find other valuable, productive ways to spend our time.
- During this time I am also going to spend time daily in prayer and devotion. I find time daily to waste time online, in front of the TV or doing who knows what. I want to spend some of that wasted time studying the Bible so that I can have the strength to get through difficult times in life.

Change
While I like to say that I am quick to adapt to change, the truth is that I'm not. I may not be like my grandparents who have the e-machine we all got them for Christmas one year in their spare room closet because they don't want a computer. I have embraced the technology age, as you can tell, and don't know how I would live without my computer, cell phone and DVR. However there are other changes that I balk at. Right now we are preparing for quite a few changes in our lives that are quite stressful for me. The change that I did not even think would be a problem is the one I have been dwelling on the most lately.
Munchkie is turning two.
I know that I'm being slightly ridiculous, but I'm really struggling with this. I have been looking at old pictures, watching old videos and pulling out some tiny little clothes. I just can not believe that two years have gone by so quickly. I always thought two-year-olds were still babies and that it wasn't until they were closer to kindergarten that they became "kids" but that's not the case. Or maybe Munchkie is closer to kindergarten than I want to admit. Either way, there is no longer a baby in this family. I think that because I work with infants and toddlers I see these little babies and realize how big Munchkie really is. She helps me cook, wipes up her own messes (don't worry, I clean up after her), can put her dishes in the sink, picks out her meals and clothes, and knows every word of every song on her Raffi CD.
Munchkie's Daddy might say that I have "baby fever" and that may be partially right. Mostly I'm just mourning the loss of my baby. My baby that would cuddle with me and fall asleep in my arms. My baby that was so tiny and dependent. My baby that needed to be fed and clothed. My baby that was chubby and immobile.
I think part of my mourning is because I know that it will be several years before there is another baby in our family. Yes, did all of you out there read that. It will be several years before there is another baby in our family. Munchkie's Daddy has five more years of school left and I can't even begin to imagine being the breadwinner, keeping up with Munchkie, holding a home together while being pregnant and then supporting a family of four humans and two canines while Munchkie's Daddy is in school. Not happening.
And so tomorrow we take Munchkie to get her picture taken for her second birthday, thus starting her birthday celebration. We will be celebrating her transition from babyhood and I will try not to let my mourning effect my smile. I will have fun enjoying this stage in our lives. I will sit and play with my little girl who tells me what to play and how she wants to do things.

While our friends were here we wanted to give them the full east coast experience (as we do with all first time visitors), however with two kids sleeping/napping schedules, we didn't really get to go out and see much. So we mostly just had food that is more available on the east coast. Isn't that what people enjoy the most? I know I do!
We made lobster rolls on fresh bread, pulled some soup from the freezer and threw together a salad. I happened to think it was delicious.

Lobster Rolls
1-2 pounds fresh/defrosted frozen lobster (can use smaller amount of lobster and add shrimp or scallops as well)
4 cloves fresh garlic
1/2 tablespoon butter
2-3 tablespoons melted butter
- First I sauteed the garlic in the pan with the 1/2 tablespoon of butter on medium heat.
- Then I added the lobster, don't put too much in the pan, only enough to cover the bottom.
- The lobster only takes a couple minutes to cook. You do NOT want to overcook it! You'll know when the lobster is done because instead of being "squishy slimy" it will feel firm when cooking utensil is pressed on it.
- When the lobster was finished cooking there was quite a bit of water in the pan that came from the lobster. I dumped this out and then melted the additional butter in the pan. Then I poured the butter over the top of the lobster in a bowl.
- We were pulling the rolls from the oven just as the butter was melting, talk about perfect timing. The rolls are cut like a hotdog bun (which can be used as well) and the lobster placed inside. You can also slice the buns and "toast" them, cut side down, in a pan with a teaspoon or so of melted butter if you want.
Rolls
2 cups flour
1 1/2 teaspoons active dry yeast
1/4 teaspoon salt
1/2 teaspoon sugar
7/8 cup water
- Put all ingredients in a breadmaker and put on dough setting, or take out before it starts to bake if you don't have a dough setting.
- If you don't have a breadmaker, mix together until forms a dough. Let rise for 45 minutes. Knead.
- At this point form the dough into the shape you want and place on the pan you will be cooking it on.
- Let rise for 30 minutes.
- Preheat oven to 450 degrees.
- Bake for 12-15 minutes.
Good friends and good food are just what we needed to take our mind off of the anxiety of waiting for answers to the uncertainty of our future. A little break to enjoy being in the moment and not to worry about the future was much appreciated.

Pancakes make my day
After a pretty busy day at work I really appreciate not having to think. Really about anything, but especially about dinner. I think it's because I have been organizing, planning and picking up messes all day that having to do it at home puts me over the edge. Today was especially emotionally draining after receiving some not so great news on our time of waiting, so coming home to dinner ready to be made was wonderful.
I had to get over the fact that I hate Valentine's and appreciate the incredibly thoughtful, kind and selfless act Munchkie's Daddy did by making me dinner tonight. Not only was it dinner, but it was breakfast for dinner, my absolute favorite kind of meal, and his absolute least favorite meal. Now that is a complete selfless act. I can even somewhat appreciate the V-day sprinkles in and on the pancakes.
I think that it what Valentine's Day is truly about. Not all that ridiculous sappy love crap that is thrown in your face everywhere, but the selfless and unconditional acts of love. Completely putting yourself aside to do something for someone else, even if you don't like it. That is what love is about. Not about how many flowers, how expensive the chocolates or how fancy the dinner, but unconditional love expressed through something simple and sacrificial. Whether it be your mom as I appreciated for so many years, a beloved pet, or your romantic interest, unconditional love is the ultimate gift to receive.

The cool thing to do when you have a blog is to have giveaways. I have entered countless giveaways on the blogs I follow and have, sadly, never won anything. Since holidays are for great deals, and I am close to having 2,000 hits on my blog (wow!) I thought I would try out a giveaway on my blog, even though it's not a cool new product.
I had talked earlier about how we made our Christmas presents this year and how much work it had been. We had made extras because we didn't want to run out after all of the work we had put into them.
I bet you're wondering what exactly are these presents? A cookbook, pure homemade vanilla, a small utensil set (our favorite, we have about 4 sets of these), and all of this is wrapped in a dish towel.
We compiled our favorite recipes from all different sources into a cookbook for our friends and families. The recipes came from scribbles on scrap papers in a folder, cookbooks, internet searches and our families. We enjoy cooking and wanted to pass along some tasty recipes to others.
The recipes are divided into nine different sections including Breakfast, Breadmaker Breads, Soup, Starters and Snacks, Sauces, Sides, Entree, Dessert and Beyond Food. There are also occasional color photos of the items taken by us. The recipes range from an amazing blueberry muffin to stinky shoe solution.
We also made homemade vanilla. Many kinds of vanilla have additives, including the dreaded high fructose corn syrup, and aren't really pure vanilla. Don't worry I opened, scraped and sliced the vanilla beans myself. This is pure vanilla. I actually haven't baked since it was finished brewing in my cabinet, but I hear it is very good.
So, I am going to offer two of these to two people who read my blog. I don't have any neat computer program that will randomly select a winner, so I will have to do it the old-fashioned-pick-a-name-out-of-a-hat way.
